Remember: Many Caribbeans have Indian heritage, just like Kadarnauth, who is from Guyana. As such, The Nest is really Indian-Caribbean-Chinese fusion.
As such, another popular category is Bhungal, which is a powerful, flavorful cooking style with curry, cumin, coriander, chilis, and other spices. It’s pronounced “boon-jal” and has various spellings since the word has Hindi origins. The Nest offers Bhungal with Goat, Duck, Lamb, Chicken, and Pork.
